Hey everyone! It’s the last Wednesday of the month, so that means I’m linking up with Shay for another What’s Up Wednesday post. Every month we answer these questions:

This month is definitely unique since we’re all under orders to “stay-at-home” and practice social distancing. We haven’t left our house since March 17th, with the exception of walking around our neighborhood. We’re still living our lives though- just not around people. Anyway, here’s a bit of what we’ve been up to:

What We’re Eating

We are well stocked on groceries, and I’m used to cooking dinner every night so this hasn’t been much of an adjustment for me. I’m typically a penny pincher when it comes to eating at restaurants. I hate spending money on food when I know I could just make something at home for way less money. So we’ve been having our regular meals. Things like tacos, grilled steaks, make your own pizza night (using the frozen pizza crusts from Trader Joe’s), grilled chicken sausage with BBQ sauce, pasta with chicken and pesto sauce, etc. For sides we eat a lot of frozen veggies and rice.

Something new I’ve made for dinner this week was:

Breakfast Tacos:

I took corn tortillas, fried them (in vegetable oil) while folding them over into a taco shape(cook for about 2 minutes per side) and then I set those on Paper towels to drain. Meanwhile I cut some leftover grilled steak into bite size pieces and then warmed that up in a frying pan. I cracked 4 eggs into a bowl, added a couple splashes of milk, scrambled them up, and then poured it all into the frying pan with the steak. I cooked the eggs until they were almost set, added salt and pepper, then I threw in a handful of shredded cheese(mine was a mix of cheddar and colby) and gently mixed it around until it was all melted through and the eggs were set. Then I filled each taco shell with the egg and steak mixture, and then topped each one with some green taco sauce and diced onion. They were really good!

We actually had this for dinner again last night, but I used bacon instead of steak. My husband loves breakfast for dinner, so this was a hit with him!

Brazi Bites! Have you tried these? I bought them at Target. They are so good! I like to dip them in that boysenberry chipotle sauce pictured above. Yum!!

What I’m Reminiscing About

We were able to get in a trip to Disney’s California Adventure before all the closures happened- definitely reminiscing about that. We had a really fun day! I wrote all about it in my last blog post. If you missed it you can click the link here:

It was our first time spending the a full day at this park. We ate amazing food, rode some awesome rides, and had a great time!

What I’m Loving

I’m loving all the time spent at home! Usually our weekdays are so super busy with work, school, homework, baseball practice, Karate, etc. Then on the weekends we either have baseball,  birthday parties or other social obligations. On the rare occasion that we have a free weekend, I feel like we need to go-see-do something to take advantage of a free day. So it’s been really nice to just be home!

My favorite part? I can put my phone ON SILENT!!!! I usually always have to have my phone on me and be ready to answer it at any moment. I own a business, so that’s just part of the deal. All day long, every day(from 10am-8pm), I have to be ready to respond to my staff when they call. If I’m being honest- it’s a total pain in the butt! It’s been nice to just turn on a movie, put my phone on silent, and watch the whole thing without having to answer a text, email, or phone call. I can take my dog for a walk and leave my phone behind. It’s been a nice break.

What We’ve Been Up To

Early in the month we celebrated Opening Day for Spring Season of Little League. Cooper got to meet baseball legend(and former Dodger)Tommy Davis:

Cooper also had his first game of the year and he went 3 for 3, and got to play first base the entire game!

Unfortunately, that was the only game we got to have this season. The next game was rained out, and then everything was ordered to shut down shortly after that. We are super bummed and missing baseball badly in this house.

Now that school and work are closed, we’ve been watching movies(we’re on the very last DVD of our Harry Potter collection), playing board games, coloring, building Legos, etc. I wrote a bit about what we were doing to stay entertained in my Freaky Friday post. You can check that out here:

Freaky Friday- Week 1

 

We’ve been trying to get outside every day when the weather has been cooperating. We played handball, took our dog for a walk around the golf course, went fishing in the little pond at the golf course, etc. I’ve never been golfing, but after spending some time walking the course, I think I really want to try it out! It’s so peaceful and pretty out there.

 

We’ve also discovered that Cooper loves puzzles. I do not enjoy puzzles- so this is an activity he does on his own or with Dad.

 

We have also been doing Cosmic Kids Yoga on Youtube. They have a bunch of different yoga sessions that last about 20 minutes each.

What I’m Dreading

I guess what I’m dreading the most is the unknown regarding this Coronavirus situation. Our bills aren’t going to stop coming- even if we’re unable to work. I don’t want the salon to be closed for too long, because I just simply can’t afford it. I also have clients who have paid for memberships and they want to use them. Plus my staff is currently without work, so I’m worried about them. So I’m dreading the thought of this shut down lasting longer, and my stress and bills continuing to build each day.

What I’m Working On

Currently, I’m working on getting all our paperwork together for our tax appointment. Fun stuff…

What I’m Excited About

I’m excited about Spring! It’s been chilly and extra rainy lately, so I am looking forward to the warm weather.

What I’m Watching/Reading

Still watching This Is Us. I didn’t get to watch the season finale last night, but plan to watch it tonight.

Also still watching Married at First Sight. I think the current season of that show wraps up soon too.

I’m reading a Nicholas Sparks book at the moment- See Me.

See Me

So far it’s good, but I’m only a few chapters in. I always like Nicholas Sparks books. They’re always a light, easy read, with a nice ending.

What I’m Listening To

Currently I’m in the office, and Cooper’s in the living room watching Ducktales. So that’s what I’m listening to.

What I’m Wearing

Pajamas and workout clothes on repeat. My favorite workout pants are these ones:


90 Degree By Reflexx

They are comfortable, they have pockets, and the price is right. I bought them in black, but they come in a lot of different colors.

What I’m Doing This Weekend

Well, not too much is on the agenda since we’re not supposed to go anywhere. We’ll probably walk the golf course again, watch some movies, and do some sort of Easter craft. I’m hoping to do a video chat with my group of friends. One of my besties had a baby yesterday!! I’m hoping we can video chat this weekend so I can see her baby boy ❤

What I’m Looking Forward To Next Month

I’m looking forward to Easter, Spring, warm weather, being outside, and everything returning to normal. That could happen next month, right?

I’m sure you’ve seen about a million memes regard this Coronavirus situation. Many of them are hilarious, and I love that we can all laugh together through this scary and unsettling time.   1. I’m late in catching up with my WUW reading.

    I LOVE those quarantine memes. They make me laugh so much!

    And we were supposed to go to California next month. We had tickets to a Dodgers game and were going to go to Universal Studios and attend my husband’s cousin’s wedding. I’m so sad this is all not going to happen any longer 😦

    1. I’m so sorry! It really stinks that we’ve all been robbed of our Springtime fun! We also had plans to see a Dodger game and take a trip to Universal! My brother and my nephews were supposed to visit and we were all going together 😕 I sure hope that this doesn’t continue throughout the summer months. I can’t imagine a summer without 4th of July celebrations and trips to the beach!
