So here goes:
What We’re Eating
Lots and lots of home-cooked meals! Restaurants have started to slowly open up here in Southern California, but most are still closed. I’m really looking forward to sitting in a restaurant, a waiter taking my order, and enjoying a meal out. But in the meantime, it’s most of the same meals on rotation around here. This week I tried creating a Cream Of Zucchini Soup that turned out pretty good! I need to tweak it a bit the next time I make it, and then I’ll share the recipe.
I love everything Zucchini!
We’ve been eating a lot of breakfast tacos around here too. They’re actually on the menu for tomorrow night. If you missed that recipe, you can click this link:
These tacos are currently my husbands favorite meal.
We have also been baking a bunch of banana nut muffins this month. Cooper LOVES these and will eat the entire batch of 24 muffins by himself! We use this recipe from Tyler Florence:
They are amazing muffins. The only things I change about this recipe are that I use a mix of Cup for Cup gluten free flour and almond flour instead of the AP flour. I also just whip all of the bananas rather that mash half, and whip half. I also add a 1/4 teaspoon cinnamon to my batter and finally, I use walnuts instead of pecans. Banana Nut muffins and walnuts just go together in my mind.

What I’m Reminiscing About
Every year since Cody and I have been together(which will be 14 years next month!), we have gone on a Summer Road Trip. We have been to all sorts of places and we always make amazing memories along the way. Lately I’ve been reminiscing about those trips! I’m getting the itch to hit the open road and go on an adventure. If you’d like to check out my posts from our road trip last summer you can find those links here:
We had such a great time exploring Denver, Mt. Rushmore, Custer State Park, Yellowstone, Grand Teton National Park, Dinosaur National Monument, and more!
What I’m Loving
I’m loving that the school year is ALMOST over!!! Wooo-hoo Summer Break! Even though Cooper has been home from school since March 16th, we’ve been doing “distance learning” since then, and I’m ready for that to be done.
What We’ve Been Up To
I feel like we’ve had a pretty busy month! We’ve spent a lot of time outside lately- we set our butterflies free this month, hatched our Praying Mantis eggs, gone on a few hikes, and had a couple swim days.
We also got to see most of my family for Mothers Day:
This last weekend we had some friends over for a little BBQ and we had a GREAT time! We hadn’t seen each other since February!
We ate some good food and enjoyed great company!
What I’m Dreading
I’m dreading the thought that 3rd grade might not be the “normal” that we’re used to. Everyone has all this “information” about what school is going to look like in these changing times, and I just dread that any of it might be true.
What I’m Working On
Organization! I have photo prints that I need to put into albums, work papers that I need to file away, and closets that need to be purged. It’s all on my To-Do list…
What I’m Excited About
I’m excited for Summer Break, swim days, trips to the beach, and hopefully squeezing in an awesome road trip! I’m determined to make the best out of our Summer despite the possibility that things might be a little different this year.
What I’m Watching/Reading
This month I got HOOKED and I mean hooked on Hart of Dixie. It had been on my Netflix watch list for the longest time, and I finally gave it a try. I only have 3 episodes left, so I’m dragging them out. After it’s over I won’t have anything to watch…unless you count Friends re-runs and episodes of Jeopardy. Oh and Teen Mom- I watch that every week too.
Book wise, I’m slowly making my way through a Nicholas Sparks book that is just so-so.
What I’m Listening To
Cooper is really into Imagine Dragons right now, so we have been listening to them a lot.
What I’m Wearing
I always order some cute summer dresses from Venus every year, and I have been wearing these pretty regularly:
I really like that Venus has so many great dresses for less than $40. I’m usually pretty happy with the quality of their clothing.
What I’m Doing This Weekend
We’ve been invited to a BBQ over at our friends house. I hear there’s going to be a slip-n-slide, so I know Cooper will love that!
What I’m Looking Forward to Next Month
I guess this is more of a “What I’m hoping for”, but I’m really looking forward to a return to normalcy. Places being open again, eating in restaurants, going to the park, beaches being open, etc. Fingers crossed that we can see more “normal” in the next month.
What Else is New
My salon is open again!! Yay! So I’m employed again, and so is my staff. We’ve had a great response from our clients, so that has been a huge relief!
