What’s Up Wednesday- July 2020

Hi everyone! It’s been a crazy summer so far, and I haven’t been great about blogging- but I thought I’d join Sheaffer and Shay for the July edition of What’s Up Wednesday. It’s the end of the month link-up where we answer these questions:

So here I go!

What We’re Eating This Week

When it’s hot we tend to use the grill a lot, so we’ve been eating grilled chicken breast and steak quite a bit. I’ve also been grilling corn and making a really yummy Mexican corn type salad. First I grill the corn, then I cut the kernels off the cob. Then I mix the corn with mayonnaise, garlic salt, cayenne pepper, lime juice, cilantro, and Parmesan cheese. It’s so good! I’ve been making it on repeat every  week.

I also discovered making “hard boiled” eggs in the Air Fryer! It works like a charm, and the eggs peel so easily. I put my eggs in for 16 minutes at 400°F, then I put them in ice water for 5 minutes, then the shells practically fall off. It works like a charm!

I’ve had my Air Fryer for years and I hardly use it- but I’ve been trying to use it more lately. If you have any great Air Fryer recipes, please send them my way!

What I’m Reminiscing About 

My Facebook memories popped up today, and most of the pictures were from our amazing cross-country road trip that we took in 2018. We flew to Florida and spent a week at the beach, the we drove all the way home to California. It was an awesome trip! We stopped in New Orleans, San Antonio, Carlsbad Caverns National Park, Tuscon, and more. I definitely  would love to do a cross-country road trip like that again! I’m so thankful that we had that experience together, and I’m even more thankful for my pictures!

What I’m Loving

BASEBALL and SUMMER!!

I’m so happy baseball is back!! It’s so nice to finally be able to watch the games on TV! I missed it so much. I hope my Dodgers have a great season. It’s just not Summer without baseball ❤

Speaking of Summer, we’ve been soaking up the sunshine and squeezing in as much fun as we can. We’ve been spending a lot of time outside, swimming, and enjoying time with our friends and family. Our Summer Break looks a little different than years past, but we’ve done our best to maintain as much tradition, normalcy, and fun, as possible. Which leads me too…

What We’ve Been Up To

We’ve had a really fun, and really busy month! We started out July with my favorite party of the year. We have awesome friends who live in a great neighborhood, and they throw the best 4th of July celebration around. It was a little different this year, and more low-key than usual…but still as fun as ever! We danced, we BBQ’d, we sang Karaoke, we went swimming, we did an egg toss contest, a water-balloon contest, and we set off a thousand Fireworks. It was a great day!

It was a great day spent with family and friends that we love like family ❤

About a week after that we spent the day at my cousins celebrating my Tia’s birthday. It was a fun day of swimming, visiting family, and eating great food.

A little later in the month, we took a trip to Indian Wells and had a great mini-vacation. We always stay at the Renaissance Esmerelda and we love it there. We had a great time with our friends- lots of poolside relaxation, swimming, and fun! I also ran into my friend Michelle who I originally met here on a trip 3 years ago! So that was a nice surprise 🙂

We were able to celebrate Cody’s birthday a few days early too! I’m so glad we were able to make our yearly trip here. It just wouldn’t feel like Summer without a trip to the desert.

We celebrated Cody’s actual birthday with a little BBQ at our house:

Then this last weekend, my brother and my nephews were in town from San Francisco, so we celebrated my brothers birthday with a BBQ at my moms house. It was a fun day with family and lots of food!

Then my brother and nephews came to stay at our house for a couple days. On Monday,  we took the boys to the beach:

It was so great to spend time with my brother- and it was the perfect weather for a beach day. We even saw dolphins swimming just off the coast! It was a great day.

What I’m Dreading

I’m dreading all things Covid-19. My business has taken a beating, my son’s school year is going to be virtual, and every time I turn around someone is talking about a Second Wave. I’m dreading dealing with all of that and all the uncertainty and unknown in the near future.

What I’m Working On

Last month we took a really fun road trip and I’m working on a trip recap. We stopped in Williams AZ, Santa Rosa NM, Oklahoma City OK, Estes Park CO, Grand Junction CO, and St. George UT. We also got to check another National Park off our our list: Rocky Mountain National Park. It was even more beautiful than I’d imagined it to be!

It was a really fun trip! I just need to find the time to sit down and write about it.

I’m also working on cleaning and getting rid of things we don’t use. So I’m about to venture into the world of trying to sell things on Facebook Marketplace. Wish me luck!

What I’m Excited About

My husband has been out of town for over a week and he’s on his way home. So I’m excited that he’ll be back tonight.

What I’m Watching

I’ve been loving the Bachelor and Bachelorette G.O.A.T episodes they’ve been airing! It’s fun to look back on seasons past. Plus the updates and interviews with people from the old seasons are fun to watch.

We also watched a documentary call Three Identical Strangers and that was really good. We rented in on Prime Video.

If you like silly comedies, check out How To Be a Latin Lover on Netflix. It’s a really funny movie! I think it’s a couple years old, but it’s new to me. It stars Rob Lowe and Salma Hayek and it’s great.

What I’m Listening To

Right now? The Dodger game, of course.

What I’m Wearing

I took a chance and ordered some jean shorts on Amazon, and they ended up being really cute and comfy!

Govc Mid Waist Stretchy Denim Shorts

They were only $21 and I’ve been wearing them so much I think I might buy another pair. They’re a great length and they don’t ride up like most jean shorts. I bought the “dark blue” option in medium.

Not a great picture of the shorts, but I can attest that they are comfy enough for mini-golf 😉

What I’m Doing This Weekend

We don’t have anything planned…unless I’m forgetting something. We’ll probably just take it easy at home.

What I’m Looking Forward To Next Month

I feel like I’m just taking it one day at a time right now- so I hope that I get to enjoy time with the people I love, and I hope that the month brings happiness. I’m going to say that is what I’m looking forward to.
