What We’re Eating This Week
This usual stuff. Last night I made roast chicken with rice and a veggie. We’re all obsessed with this Uncle Ben’s Jasmine Rice. I put a little butter, garlic salt and pepper in it and we all gobble it up. We don’t like any of the other flavors of this Ready Rice- only the Jasmine.
I’ve also been making this Bool Kogi Beef from Trader Joe’s every week. It’s pre-marinated and it cooks quickly on the grill. Serve it with the above rice and a veggie for a delicious dinner in under 15 minutes!
I often make tacos once a week. Now I’m not talking about real tacos(although I do make great carnitas tacos and shrimp tacos). I’m talking regular old, ground beef, taco seasoning packet, crunchy-corn shell type tacos. My guys love these, so it’s a cheap fast dinner I always turn to. I serve them with shredded lettuce, chopped tomatoes, shredded cheddar cheese and hot sauce if you like. Cheap dinner in under 20 minutes!

Quick and easy dinners are what it’s all about! Once a week I’ll make something a little more labor intensive 😉
Snack wise my son and I basically live off of this rice cracker mix. It’s our favorite! I buy 6 or 7 bags at a time.
What I’m Reminiscing About
Well it just happened yesterday, but I’m definitely reminiscing about the award ceremony at Cooper’s school yesterday! He got 6 awards!!! He has worked so hard this year- so to see him have his moment in the spotlight made my heart burst.
We had a wonderful morning at the First grade awards assembly, then we went to his classroom for their class awards ceremony. The kids sang a few songs for the parents and his teacher gave out more awards and their memory books.
It was an emotional yet wonderful day!
What I’m Loving
All the fun that comes along with the end of the school year! We had awards yesterday, Field Day is tomorrow, Talent Show on Friday, and next week they’re having a board game day, toy day, and then the year ends with pajamas and a movie day. The kids have worked hard so it’s fun that they get to relax and enjoy the end of the school year. I’m looking forward to helping out at Field Day tomorrow.
What We’ve Been Up To
May has been a busy month! We’ve had baseball, Mother’s Day, a Fair, multiple birthday parties, a trip to the Safari Park, a trip to Knott’s etc. This month has flown by!

This last weekend was busy! Friday after school we went to the movies with our friends to see Aladdin! I loved it!! It’s such a great movie.
Saturday morning we had Cooper’s end-of-season little league party. It was at a bowling alley that also has a big arcade and laser tag. Needless to say, the kids loved it. Cooper got a trophy and he was very excited about that!
After that we dropped Cooper off with my Tia Maggie and we went over to our friends house for his surprise 40th birthday. It was a really fun party with really fun people. We had such a great time!
Then on Sunday we went out for my friend Noreen’s birthday dinner. We had great food and great conversation with some of our favorite people.
We had a great weekend!
What I’m Dreading
Nothing I can think of at the moment.
What I’m Working On
We have a couple vacations coming up this Summer, so I’m in research mode. One of those trips is a road trip,so I’m looking up all the fun little stops along our route. I love road trip planning!
What I’m Excited About
SUMMER BREAK!!! I am looking forward to having more time with my son! We have a couple trips planned, lazy days, beach days, time with our friends, Knott’s trips, Legoland, 4th of July fun, my husband’s birthday, and all the other wonderfulness that Summer Break brings.
What I’m Watching
Jeopardy! I’m super enthralled with James Holzhauer and his incredible winning streak he has going.
I’ve also been watching the new season of The Bachelorette. I like Hannah- she was super entertaining on the Bachelor and I’ve enjoyed her season so far. She’s really likable and fun. It looks like this season is going to be good!
What I’m Listening To/Reading
Lately a lot of Panic at the Disco(Cooper’s current favorite), Jack Johnson, and Jason Mraz.
I have also been playing the “Prince Ali” song on YouTube at least once a day for Cooper. Ever since we went to see Aladdin he has been obsessed!! #a100badguyswithswords 🙂
What I’m Wearing
I ordered a few cute tops from Venus recently. I really like their clothes. I feel like whenever someone compliments me on something I’m wearing, that’s where it’s from. All of the tops and the dress in the pictures below are from Venus.
What I’m Doing This Weekend
We’re going on a hike and having a picnic. We’re also going to this petting zoo in San Juan Capistrano that we love. It’s called Zoomars and we’ve been going there since Cooper was a baby. We feed the animals, he rides the horses, then we grab lunch in cute little downtown San Juan Capistrano.
