What’s Up Wednesday- May 2021

Hey everyone! It’s the last Wednesday of the month, so I’m linking up with Schaeffer and Shay for the May edition of What’s Up Wednesday. Side note: I can’t believe May is just about over- I feel like the new year just started a month ago! I have never felt time go by so quickly in my entire life. I’ll be answering the usual questions this month:

So here goes!

What We’re Eating

I’m still cooking three meals every week from the Marley Spoon meal kit delivery service. We have been eating these meals for 7 months and we have loved just about every meal! It’s a nice way to incorporate new recipes into our weekly menu, and it saves me from having to go to the grocery store. It also keeps me from getting into a cooking rut since I’m looking forward to trying new recipes every week. The delivery arrives on Tuesday, so we eat these meals Tuesday, Wednesday, and Thursday nights.

On the other nights I keep it pretty simple. I usually do breakfast for dinner once a week because Cody and Cooper could eats eggs and bacon for every meal. I definitely don’t mind- eggs, bacon, and hashbrowns makes for an easy meal! We’ll also grill some steak or chicken and have that with a simple side like rice and a veggie.

We usually go out to eat once a week. We’re still making the rounds to the restaurants in our area. There are SO MANY restaurants in the OKC area! It’s nuts. We could go out to each every night for a year and still barely scratch the surface! It’s a challenge I’m happy to accept- I love trying new restaurants!

What I’m Reminiscing About

This week I have had a ton of my Memories pop up on Facebook from Cooper’s Kindergarten year, so I have been reminiscing about that year and all the fun stuff he got to do. He was so little, and school was so easy back then! He made great friendships that he still has to this day. I really enjoyed his Kindergarten year!

Other than Kindergarten, I’ve also been missing Disney World like crazy. I’m really glad we were able to go last year before the crazy part of 2020 started, but it’s been a while now and I’m SO ready to go back…

It’s my happy place for sure! Hopefully we’ll manage to get a trip in before the year ends. In the meantime, I have my pictures from past trips to look through and reminisce.

What I’m Loving

I’m loving SPRING!!! This is the first time in my life living somewhere that gets actual seasons and I’m absolutely loving Spring. The Winter was… long. I loved it when it snowed(and Oklahoma saw an abnormal amount of snow this Winter so I felt lucky for that), but the snow was brief and short lived. The rest of the Winter was just chilly and brown. Brown grass, dead looking trees- just not my favorite. So when March rolled around and everything started waking up, I was SO excited! My favorite thing about Oklahoma is how green everything is, so I’m really glad to have that back. We’ve been enjoying the mild temperatures, the rain, the thunderstorms, and ALL the wildflowers! There are flowers EVERYWHERE. It’s really beautiful!

What We’ve Been Up To

Our Saturdays mornings have been spent at the ballpark watching Cooper play baseball! This past weekend he had his last game and we were so bummed to see his season end. He had a great time making new friends, and he finally got to be on the Dodgers! We had a little team party after our game the weekend before last. We went to Wheeler Park and watched the kids run around and have fun. Then another mom and I went on the giant Ferris wheel with the boys. It was a fun day!

I was so happy to get to see Cooper play again! He only got to play one game last year before his season got cancelled, so we had waited a long time to see him back out on the field!

Halfway through the month went to our first OKC Dodgers baseball game! We were there for their second home game of the year and it also happened to be fireworks night! We had a great time. The stadium is really nice and I love that we are so close to it.

Last week, we went on a mini-road trip to Texas to see my husband’s New York Yankees play the Texas Rangers! We had such a good time. We stayed at the Live! By Loews hotel and it was so nice! The hotel is basically attached to the new stadium so we just walked over. It’s also attached to a restaurant/bar complex called Texas Live! so it’s really the perfect place to stay if you’re in town to see a game. It’s also within walking distance to the Cowboys Stadium, so I’m sure we’ll be back at some point to watch the Cowboys play.

While we were in Texas we took a little trip to the nearby Ripley’s Believe it or Not! Museum. We had such a fun afternoon there! We started off in the museum, and it was really interesting. There was a lot to see! After the museum we checked out the Mirror Maze, which was way harder than I thought it would be. We wandered around for almost 10 minutes and then finally found the exit…or so we thought. It ended up being the entrance that we had come in through, but we decided that was good enough. We also toured the Wax Museum. We actually liked this part the best! some of the wax figures are super funny looking so that was entertaining. There is also a “Fear” section at the end with scenes and characters from scary movies. There are some jump-scare type things that happen during this section, so Cooper thoroughly enjoyed that! We were so happy we decided to come here! It’s a fun stop if you’re in the area.

This month we also did our yearly Caterpillar/Butterfly raise and release. We love setting them free every year! I love that Cooper still loves to do this every Spring.

For another educational type thing, we also put together a little terrarium that we ordered on Amazon. We did this same one years ago but Cooper was little so he doesn’t remember. He was really excited to see the seeds sprout within just a couple of days.

This last weekend Cody surprised us by buying us tickets to the Monster Jam Monster Truck show! It was held inside the Chesapeake Energy Arena which is where the Oklahoma City Thunder play. We had so much fun! During the intermission of the Monster Truck show, these FMX stunt riders came out and did some really amazing stunts on dirt bikes. The whole show was just a really fun time!

We’ve also spent a bunch of time outside this month exploring some of the local nature parks. We’ve seen deer, turtles, snakes, birds, and a couple crazy looking bugs! Take a look at my Instagram to see the video of the BIG rat snake we came across a few days ago:

What I’m Dreading

What I’m Working On

We have a fun summer trip coming up, so I’m working on ironing out all the details. I’m a planner, so I like to search for the best places to eat, the coolest hotels, the best activities in the area, the best hikes for families, etc. I’m a big believer that great vacations don’t just happen- it takes research! Plus I love doing all the trip planning. For me it’s fun!

What I’m Excited About

Tomorrow is officially Cooper’s LAST day of school!!! He’s been done with his curriculum almost 2 weeks ago, but has still had to do an hour of math and or language arts each day as busy work. But as of 10am tomorrow morning he will officially be DONE! We are very excited about completing an entire year of online homeschool. It was no easy feat. I’m really, really proud of him! We are both excited to be kicking off our Summer Break tomorrow!

What I’m Watching/Reading

I started watching The Real Housewives of Dallas this season and I was hooked! I loved it- they cracked me up and there was a good amount of drama. I don’t like drama in my life, but I love watching it on TV ๐Ÿ˜†

After the current season ended, I went online to see where I could watch the older seasons and I found them on Peacock. So I just started watching Season 1 and I like it so far.

I’m also watching The Masked Singer. Cooper and I really love this show- I think it’s super fun! When I guess the correct person under the mask I get SO excited!

I’m also watching This Is Us, of course. Love that show. I’m so sad that next season will be the last!

Other than that, I watch a lot of baseball games.

As far as what I’ve been reading goes, I read Jessica Simpson’s autobiography Open Book. I was curious, and she definitely left me surprised. It wasn’t the best book I’ve ever read, but it kept me interested the entire way through.

Cooper and I read two of the I Survived books together this month. I highly suggest these for boys in the 8-12 age range. They’re interesting, suspenseful, and educational.

We also read Island of the Blue Dolphins together. It was a book I read as a kid and I thought he’d like it. It has some really sad parts in it, but it’s a good book. He ended up loving it.

What I’m Listening To

Currently, the Dodger game ๐Ÿ˜Š Hoping to see them beat the snot out of the Astros ๐Ÿคฎ

What I’m Wearing

Nothing new here- I definitely need to go clothing shopping for myself!

What I’m Doing This Weekend

We are going shopping for a new grill! Our old one wasn’t worth keeping, so we gave it away before we moved. Since we’ve been here we’ve been using our little camping grill, but it’s not going to cut it for the summer. So we get to pick out a new one!

Other than that, we may take a drive to check out the Tall Grass Prarie Preserve. I feel like with all the wildflowers blooming, it would probably be a great time to go see it. I’m also really hopeful that we’ll see some baby Bison! I’ve heard great things about the preserve, and there are some waterfalls nearby too.

What I’m Looking Forward to Next Month

As I mentioned earlier, we’re going on a trip! It’s to somewhere we’ve never been before and I can’t wait! We have a family tradition of taking a trip every June to celebrate our anniversary as a couple and to celebrate the end of the school year. It’s one of my favorite traditions!

  1. I have a goal to visit every baseball stadium in the MLB so now Iโ€™m definitely looking forward to our trip to the Rangers new stadium. It sounds so fun!

    1. We have the same goal! I think it’s such a fun idea ๐Ÿ˜Š I have to say- the Rangers fans were so welcoming. We had great conversations with the Rangers fans sitting in front of and behind us. To feel so welcomed, when we were cheering for the visiting team, was really nice. Plus the stadium is just so new and nice!
