What’s Up Wednesday- June 2019

Happy Wednesday everyone! Today I’m linking up with Scheaffer for this month’s edition of What’s Up Wednesday. It’s a fun little link-up where we answer these questions:

What we’re eating:

I’ve been trying to eat lighter lately because it’s summer. So it’s been grilled chicken and rice, or grilled chicken and salad, or on nights when my husband isn’t home for dinner I’ll have a Lean Cuisine frozen dinner. Nothing too exciting, but I did make some awesome banana-nut muffins this week. We had some bananas that were way over-ripe and I hate throwing food away. So I found this Tyler Florence recipe online for Banana Nut Muffins.  It happened to call for 4 bananas and that’s what I had, so I just went with it. They turned out great!

The only substitutions I made were that I used gluten free all-purpose flour, and I used 3/4 cup of walnuts pieces, rather than the 1 cup of pecans. I just feel like banana nut equals walnuts, you know? They were dense, moist, just sweet enough, and delicious. We all loved them. This will be a regular recipe around our house for sure!

What I’m Reminiscing About:

Well, since my son is growing like a weed, and will soon be missing another front tooth, I’m reminiscing about this baby boy:

Babies just don’t stay babies long enough! Cooper is even tall enough to go on a couple of the upside-down coasters at Knott’s…. and he’s been begging me to let him ride them…but I just can’t do it! I’m not ready!

What I’m Loving:

Summer Break!! It’s been so nice not having to get up so early and rush out of the house every morning! I’ve definitely been enjoying having my son home with me- we’ve been filling our days with fun and it’s been wonderful.

What We’ve Been Up To:

So needless to say, I’ve been trying to make the most out of our time. We have been pretty busy this month! We went to the Natural History Museum in San Diego, and Knott’s Berry Farm(twice!), we saw Secret Life of Pets 2, and Toy Story 4, we went Whale Watching,  had an iplayology play date, went for a hike, went to a car show, had our friends and family over for a Father’s Day BBQ, Cooper spent a week at daytime Summer Camp, we went swimming at Grandma’s house, and we went to Professor Pennypickles. Whew! We have definitely had a fun June. I recapped a bit of it in my post last Friday. You can check that out here.

What I’m Dreading:

Well, work I guess. It’s always a challenge to figure out how to schedule myself during school breaks. I’m sure Cooper will be logging in quite a few hours at the salon with me over the summer. Luckily, he likes going to work with me! Hopefully it won’t be too often…

What I’m Working On:

Current situation! I’ve been slacking on working out and I really need to get it in gear! I’m sure many of you can relate. I’m trying to eat less chips, and get on my treadmill everyday.

What I’m Excited About:

I’m excited about our summer trips we have coming up! We’re doing a mini vacation not too far from home and a Summer Road Trip! I can’t wait.

What I’m Watching/Reading:

I’ve been watching the Bachelorette, and cringing through most of it. Hannah is really entertaining, but there is so much drama! I’m really over the whole Luke situation and I’m hoping she stops giving him roses.

I am also watching Married at First Sight! I love this show too. I’m so fascinated by these people that are willing to marry someone sight unseen! It’s crazy. Super entertaining, but crazy!

What I’m Listening To:

Currently, the Yankees game is on in the next room, so I’m half listening to that.

What I’m Wearing:

It hasn’t really been warm here with the exception of a few hot days. So it’s been the normal jeans and tank tops/blouses. I ordered a few cute flowy tops on Amazon last week when they were on as a Flash Deal. I was pretty happy with them! They’re comfortable and cute.

They come in a bunch of different prints, and these tops are really inexpensive even when they’re not on a lightning deal. I ordered a small and it fits well. The straps are adjustable too.

What I’m Doing This Weekend:

Cody and I are going to celebrate our friends 40th birthday with an adults only trip to Knott’s Berry Farm! I am so excited to ride some of the big coasters that we can’t usually ride! I think we might head down a little early so we can grab lunch at Porto’s too. If you aren’t familiar with Porto’s it’s a Cuban restaurant and bakery. Everything is delicious. What I’m Looking Forward To Next Month:

So much! I can’t wait for the 4th and the best block party in the world! Our friends Chad and Lulu live in an amazing neighborhood and they have a huge party every year. There’s a parade, a hula hoop contest, an egg toss contest, musical chairs, water balloons, a D.J., dancing, drinking, food, fireworks, and FUN! It’s seriously the best time.

I’m also looking forward to our mini-vacation to celebrate my husbands birthday. We’re staying at a hotel we love with some of our favorite people and I know we’ll have a blast.

Then I’m counting down the days until we leave for our Road Trip 2019! Every summer we do a family road trip and we have had so many amazing vacations. I’m really looking forward to our trip this year- we’ll be seeing some bucket list destinations and I can’t wait!

What Else Is New:

I can’t think of anything new at the moment.
